Sotol is made from the Desert Spoon plant and is primarily produced in the Chihuahuan Desert in northern Mexico. Raicilla is a type of mezcal made in Jalisco and traditionally distilled in small clay pots. Bacanora is made from the agave Pacifica plant and is primarily produced in Sonora.
